Tis still November, yet I already have festive fever! A jaunt up to the Christmas markets in Belfast during the week has really sparked my Christmas spirit, and the mounting pile of college work encouraged me to throw in the proverbial study towel, and bake instead. That, lets face it, will do everyone more good.
I saw this idea on Pinterest when I
should have been studying was browsing recently, and thought it was extremely cute and effective!
Add to that the fact that I found mini gluten free pretzels in Tesco at quite the reasonable price, and I was sold!
These are your basic sugar cookie recipe, with pretzel ears, m&m's or Galaxy Counters for eyes and red M&M's for noses.
The only problem with making these was trying to wade through all the M&M's to find red ones! Luckily I devised a bullet proof scheme of eating all the other colours that got in my way. Ahem.
Today marks my first batch of Xmas baking, and certainly not the last!

It has been all quiet on the baking front in these here parts, due mainly to the upcoming thesis submission that is 
This cake is so odd! My Mum loves almond flavouring and raspberries, so I invented a concoction to combine the two in a hopefully not disgusting way! The sponge is super light and filled with eggs (whites only, no racial overtones), ground almonds and icing sugar (yep, icing sugar in a sponge. I know. Where do I get it?). The filling is my usual buttercream, but this time with a punnet of fresh rasperries lashed in for the laugh like.
Fingers crossed it tastes somewhat decent, it looks pretty yummy I must say!
