Mammy's Day Almond and Raspberry Cake

It has been all quiet on the baking front in these here parts, due mainly to the upcoming thesis submission that is ruining my life taking up a lot of my time! I decided to take some time away from using my pretty little head, and bake something pretty and pink instead. This cake is so odd! My Mum loves almond flavouring and raspberries, so I invented a concoction to combine the two in a hopefully not disgusting way! The sponge is super light and filled with eggs (whites only, no racial overtones), ground almonds and icing sugar (yep, icing sugar in a sponge. I know. Where do I get it?). The filling is my usual buttercream, but this time with a punnet of fresh rasperries lashed in for the laugh like. Fingers crossed it tastes somewhat decent, it looks pretty yummy I must say! <3

We are very big on tradition in my house, especially when it comes to cake. For my lovely big brother, we always ALWAYS have a coffee cake with coffee buttercream.

Festive Foods

YAY! After what can only be described as a term of solid hell work, it's FINALLY CHRISTMAS! So this year we had my coffee Christmas tree cake for the day itself, as is tradition.
For Christmas Eve I had the following treats ready to roll! Reindeer Cupcakes, complete with Pretzel ears!

Rudolf the red nosed cookie

Tis still November, yet I already have festive fever! A jaunt up to the Christmas markets in Belfast during the week has really sparked my Christmas spirit, and the mounting pile of college work encouraged me to throw in the proverbial study towel, and bake instead. That, lets face it, will do everyone more good.
I saw this idea on Pinterest when I should have been studying was browsing recently, and thought it was extremely cute and effective!
Add to that the fact that I found mini gluten free pretzels in Tesco at quite the reasonable price, and I was sold!
These are your basic sugar cookie recipe, with pretzel ears, m&m's or Galaxy Counters for eyes and red M&M's for noses.
The only problem with making these was trying to wade through all the M&M's to find red ones! Luckily I devised a bullet proof scheme of eating all the other colours that got in my way. Ahem.
Today marks my first batch of Xmas baking, and certainly not the last!

Coffee Cake; Perk up!

Oh dear, appologies for the awful title. I am motivated enough to bake and update my lovely little corner of the world wide web, but sometimes my puns fail even me!
Coffee cake is an absolute favourite in my house (none of that "coffee and walnut" shite though. That's just bad.) I am also Mary Berry's biggest fan under the age of 70 and have been using her recipes long before she joined the British Bakeoff!
In fact, I have a very dog eared recipe book of hers belonging to my mum from the 70s or 80s, covered in icing and butter and totally ruined. The recipes it holds are thankfully intact! As we have a special family member over visiting, it seemed only fitting that I would make his very favourite cake. This one's for you Uncle Mike!

Twixcuits and Rolo cookies

Sometimes it's best to go back to the classics!
Cookie dough with added egg yolks for crunch, mixed in with Twix pieces, or stuffed with whole Rolo's, Nom.
I may or may not have eaten some of the aforementioned Rolo's and Twix's while baking. It was worth it. <3
